Firecracker Meatballs (Hello Fresh)

1Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 425 degrees.

2Wash and dry all produce.

3Trim and thinly slice scallions , separating whites from greens.scallions

4Mince scallion whites.

5Peel and mince ginger .ginger: 2 thumbs

6In a large bowl, combine mayonnaise , sour cream , honey , soy sauce (4 tsp for 4 servings; you’ll use the rest later), and sriracha to taste.mayonnaise: 4 tbsp, sour cream: 4 tbsp, honey: 4 tsp, soy sauce: 2 tsp, sriracha

7Set aside.

8Heat a drizzle of oil in a small pot over medium-high heat.oil

10Cook, stirring, until golden brown, ⏱️ 1-2 minutes .

12Bring to a boil, then cover and reduce to a low simmer.

13Cook until rice is tender, ⏱️ 15-18 minutes .

14Keep covered off heat until ready to serve.

16Form into 10-12 (20-24 for 4) 1½-inch meatballs.

17Place meatballs on one side of a lightly oiled baking sheet .

18On empty side, toss green beans with a drizzle of oil, salt, and pepper.green beans: 12 oz

19Roast on top rack until meatballs are cooked through and green beans are browned and tender, ⏱️ 14-16 minutes .

20(For 4 servings, divide between 2 sheets; roast meatballs on middle rack and green beans on top rack.)

21Fluff rice with a fork.

22Season with salt and pepper.

23Divide between bowls or plates.

24Carefully add meatballs to bowl with sauce.

25Toss to coat.

26Top rice with meatballs and drizzle with any remaining sauce.
